Ingredients

  • 1 cup atta (whole wheat flour)
  • ½ cup ghee (clarified butter)
  • 1 cup sugar (or as required)
  • 2 cups water
  • 1 tablespoon whole cashews (optional)

Method

  • Prepare the Ghee and Flour:
    • Heat ghee in a heavy-bottomed kadai or pan.
    • Add whole wheat flour to the hot ghee and start roasting it, stirring continuously to ensure even browning.
  • Prepare the Sugar Syrup:
    • In a separate pan, combine sugar and water. Heat on medium to high flame until the solution comes to a boil.
    • Once boiling, lower the flame and let the sugar solution simmer.
  • Cook the Halwa:
    • Continue roasting the atta until it turns golden brown, releases a fragrant aroma, and begins to release ghee.
    • Increase the flame under the sugar solution and bring it to a bubbling boil.
    • Carefully pour the boiling sugar solution into the roasted atta mixture. Be cautious as the mixture may splutter.
    • Stir vigorously to ensure no lumps form. The halwa will absorb water and thicken quickly.
  • Finish and Serve:
    • Keep stirring until the halwa reaches a semi-thick consistency, similar to sooji halwa.
    • Remove from heat and serve the atta halwa hot or warm. Garnish with cashews if desired.
