Atta Halwa

Ingredients
1 cup atta (whole wheat flour)
½ cup ghee (clarified butter)
1 cup sugar (or as required)
2 cups water
1 tablespoon whole cashews (optional)
Method
Prepare the Ghee and Flour
:
Heat ghee in a heavy-bottomed kadai or pan.
Add whole wheat flour to the hot ghee and start roasting it, stirring continuously to ensure even browning.
Prepare the Sugar Syrup
:
In a separate pan, combine sugar and water. Heat on medium to high flame until the solution comes to a boil.
Once boiling, lower the flame and let the sugar solution simmer.
Cook the Halwa
:
Continue roasting the atta until it turns golden brown, releases a fragrant aroma, and begins to release ghee.
Increase the flame under the sugar solution and bring it to a bubbling boil.
Carefully pour the boiling sugar solution into the roasted atta mixture. Be cautious as the mixture may splutter.
Stir vigorously to ensure no lumps form. The halwa will absorb water and thicken quickly.
Finish and Serve
:
Keep stirring until the halwa reaches a semi-thick consistency, similar to sooji halwa.
Remove from heat and serve the atta halwa hot or warm. Garnish with cashews if desired.
