Ingredients
For the Dough
:
2 tbsp Instant Yeast
1/3 cup Sugar
1 Egg (or 1/4 cup fresh curd for vegetarian option)
4 tbsp Oil or Butter (oil recommended for softness)
1/2 tbsp Salt
2 cups Whole Wheat Atta
1.25 cups All-Purpose Flour
1 cup Warm Water (adjust based on flour)
For Coating or Glaze
:
Cinnamon Sugar Coating
:
1 cup Sugar
1 tbsp Cinnamon Powder
Pinch of Salt
Colorful Glaze
:
3/4 cup Icing Sugar
1-1.5 tbsp Milk
Food Color of your choice
1/2 tsp Vanilla Extract (optional)
Method
Prepare the Dough
:
Dissolve yeast in warm water and let sit for 5 minutes until foamy.
In a bowl, beat together whole wheat flour, sugar, egg (or curd), oil/butter, and salt.
Add all-purpose flour gradually, 1/2 cup at a time, until the dough starts pulling away from the bowl's sides.
Cover the bowl with plastic wrap or a clean kitchen towel. Let rise in a warm place until the dough doubles in size (about 2 hours).
Shape the Donuts
:
Punch down the dough and roll it out on a floured surface to about 1/2 inch thickness.
Use a large round cutter (or glass) to cut circles and a smaller cutter (or nozzle back) for the holes.
Cover and let the donuts rise until puffy (about 1-2 hours).
Fry the Donuts
:
Heat 1-2 inches of oil in a deep vessel.
Fry 1-2 donuts at a time, cooking until light brown on one side, then flipping to cook the other side.
Transfer to a cooling rack to drain.
Coat or Glaze
:
Cinnamon Sugar Coating
: Mix sugar, cinnamon powder, and salt. Dip hot donuts into the mix to coat evenly.
Colorful Glaze
: Mix icing sugar, milk, food color, and vanilla extract. Dip the donuts into the glaze for a colorful finish.
Serve warm for the best taste.
