Spinach-Banana-Whole Wheat-Choco Cupcakes

Ingredients
Dry Ingredients
:
1 ¼ cup VIVATTA Chakki Atta
¼ cup Maida (or replace with whole wheat flour)
⅓ cup Cocoa Powder
½ cup + 1 tbsp Powdered Sugar
2 tbsp Baking Powder
½ tbsp Baking Soda
½ tbsp Salt
Wet Ingredients
:
½ cup Milk
¼ cup Maple Syrup
70 gms Cleaned and Washed Spinach
½ cup Mashed Banana
1 ½ tbsp Vanilla Essence
⅙ cup Melted Butter + ⅙ cup Oil (or ⅓ cup Oil)
Topping
:
Chocolate Chips (for garnish)
Method
Prepare the Ingredients
:
Sieve all the dry ingredients together (atta, maida, cocoa powder, powdered sugar, baking powder, baking soda, and salt) and set aside.
Blend all the wet ingredients (milk, maple syrup, spinach, mashed banana, vanilla essence, melted butter, and oil) in a mixer until smooth.
Combine Wet and Dry Ingredients
:
Pour the blended wet ingredients into the dry ingredients. Gently fold to combine.
If the batter is too thick, add 1-2 tablespoons of water as needed.
Bake the Cupcakes
:
Preheat the oven to 160°C.
Pour the batter into cupcake moulds and garnish with chocolate chips on top.
Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
Serve
:
Let the cupcakes cool slightly before serving. Enjoy these healthy treats warm or at room temperature!
