Ingredients
75 grams butter, room temperature
½ cup (60 grams) powdered sugar
1 cup (165 grams) maida (plain flour)
¼ cup (38 grams) vanilla-flavored custard powder
Pinch of salt
¼ teaspoon baking powder
Pinch of baking soda
3 tablespoons (30 grams) red tutti frutti
3 tablespoons (30 grams) green tutti frutti
2 tablespoons (20 grams) cashew, chopped
1 teaspoon pineapple extract
2 tablespoons milk
Method
In a large bowl, combine butter and powdered sugar. Beat until smooth and creamy.
Sift maida, custard powder, salt, baking powder, and baking soda into the bowl. Mix until well combined.
Add red and green tutti frutti, chopped cashews, and pineapple extract. Mix well.
Gradually add milk and bring the dough together (do not knead; just combine).
Shape the dough into a cylindrical log, wrap it in cling wrap, and refrigerate for 1 hour.
Preheat the oven to 180°C.
Slice the dough into thick slices and place them on a baking tray.
Bake for 15 minutes or until golden.
Cool completely before serving or storing.
