Ingredients

  • 75 grams butter, room temperature
  • ½ cup (60 grams) powdered sugar
  • 1 cup (165 grams) maida (plain flour)
  • ¼ cup (38 grams) vanilla-flavored custard powder
  • Pinch of salt
  • ¼ teaspoon baking powder
  • Pinch of baking soda
  • 3 tablespoons (30 grams) red tutti frutti
  • 3 tablespoons (30 grams) green tutti frutti
  • 2 tablespoons (20 grams) cashew, chopped
  • 1 teaspoon pineapple extract
  • 2 tablespoons milk

Method

  • In a large bowl, combine butter and powdered sugar. Beat until smooth and creamy.
  • Sift maida, custard powder, salt, baking powder, and baking soda into the bowl. Mix until well combined.
  • Add red and green tutti frutti, chopped cashews, and pineapple extract. Mix well.
  • Gradually add milk and bring the dough together (do not knead; just combine).
  • Shape the dough into a cylindrical log, wrap it in cling wrap, and refrigerate for 1 hour.
  • Preheat the oven to 180°C.
  • Slice the dough into thick slices and place them on a baking tray.
  • Bake for 15 minutes or until golden.
  • Cool completely before serving or storing.
