Ingredients

For Ginger Cookies:

  • 165 gms Whole Wheat Atta
  • 1 tbsp Baking Powder
  • 115 gms Brown Sugar
  • 55 gms Butter
  • 1 tbsp Baking Soda (level)
  • 2 tbsp Ginger Powder
  • ½ tbsp Cinnamon Powder
  • ¼ tbsp Nutmeg Powder (optional)
  • 1 heaped tbsp Golden Syrup or Honey
  • 3-4 tbsp Milk (to bind)

Method

  • Prepare the Dough:
    • Melt butter with brown sugar and honey in a pan. Let it cool slightly.
    • In a mixing bowl, combine whole wheat atta, baking powder, baking soda, ginger powder, cinnamon powder, and nutmeg powder (if using). Mix well.
    • Add the cooled butter-sugar mixture to the dry ingredients and mix with a spatula.
    • Gradually add milk (1 tablespoon at a time) to bind the mixture into a dough.
  • Shape the Cookies:
    • Divide the dough into approximately 35 gms portions. Roll into balls and flatten slightly.
    • Place the cookies on a baking tray lined with parchment paper.
  • Bake the Cookies:
    • Preheat the oven to 165°C (329°F).
    • Bake for 7 minutes, then press each cookie gently with a spoon to flatten further.
    • Continue baking for another 5-6 minutes or until golden brown. Do not overbake, as cookies will harden upon cooling.
  • Cool and Serve:
    • Let the cookies rest on the tray for 5 minutes, then transfer to a wire rack to cool completely.
    • Enjoy with tea or use them as a base for a no-bake tart or other desserts.
